Just Maz Holiday Black Ballz



Yummy in the Tummy....A tradition in our home every year our Holiday Balls here is the recipe you will never taste a better ball...............

Just Maz Holiday Black Ballz

4 squares of unsweetened chocolate
2 cups of flour
2 teaspoons of baking powder
1 1/2 cups of sugar
1/2 cup of cooking oil
2 teaspoons of vanilla
3 large eggs
shredded coconut

Powdered Sugar

Melt the chocolate on the stove it makes it easier and you can keep a better eye on it
Set the chocolate aside
combine the flour and baking powder together in a mixing bowl
Now in your mixer put the oil, vanilla, sugar, and add the chocolate last mix it up
Add the eggs one at a time to make sure they get mixed in good
Now add the dry ingredients make sure they are all well mixed you want your balls to be perfect

Cover your mixture and put it in the refrigerator for at least an hour or more if your busy

Ok now to make your balls............

Get your Area ready for your balls

Put coconut in a bowl
Put your powered sugar in another bowl
Have a plate for your balls you want to get your balls done a batch at a time after all we want good Holiday Balls
have your cookie sheets ready and grease the cookie sheet ..... your balls will stick if it isn't

Alrighty now go get your mixture. Take a tablespoon and scoop some of your mixture on to your palm make a mark in your ball with your thumb to put the coconut in you want the coconut to be the surprise in your holiday balls. So put just a pinch of coconut into the middle of your ball and roll the ball in the palm of your hand make it so you do not see the coconut. Now place your ball on the plate and make more balls............ sweet . Once you have a plate of balls pop them into the powered sugar and on to the cookie sheet

Cook them for 10 minutes or so in a 375 oven cool for a few minutes on the sheet then place on a rack to cool completely.....

There you are you have your delicious Holiday Balls ready to pop in you mouth

Just Maz Lemon Barz

Just Maz Lemon Barz

This Cookie bar takes Lemon to the next level
Easy to freeze

6 tablespoons butter
¼ cup sugar
1 cup all purpose flour
2 eggs
¾ cup sugar
3 tablespoon all-purpose flour
¼ cup finely shredded lemon peel and pulp
3 tablespoons lemon juice
¼ teaspoon baking power
Powered Sugar

In small mixer bowl beat butter till softened
Add ¼ cup sugar and ¼ teaspoon salt
Slowly add one tablespoon of the lemon juice
Beat until fluffy
Stir in cup of flour
Press dough into the bottom of a well greased 8x8x2 pan
Bake 350 for 15 minutes

In the same mixing bowl beat the eggs
Add the ¾ cup sugar
3 tablespoons of flour, the lemon peel ,juice and baking powder.

Beat on low for a few minutes scraping down the sides until it is well mixed. Pour over the cooked layer. Bake for 30 more minutes give or take. Until center is set

Cool cut and garnish with power sugar

These cookies rock ....

Disappearing 12x12 Oatmeal Cookies

Ingredients

1 cup butter
1/2 cup Crisco (softened)
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs (4 whites)
1 teaspoon pure vanilla extract
1 12/2 cups of all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon or nutmeg (which do you like best)
3 cups of Oats (I like old fashion never cooked...)
1 cup raisins
1 cup nuts pick you kind i like walnut or macadamia
1 cup semi- sweet chocolate or chuck chocolate what do you desire...

Directions:

Ok oven......all ovens are different and you need to adjust I do my cookies at 325 cause 350 always cooks the edges to fast...So start at 325 you know your oven right? I cook mine for 12 minutes and always check them at 10 i don't know it is like they are little cookie children that need mommy to check on them....

Cookie sheet you can line it with parchment or not. I don't it seems there is enough butter and Crisco that nothing is ever going to stick to this cookie sheet.....I use two cookie sheets at a time in the oven but it does not seem to make a difference in the cooking time...per batch

  • Beat the butter and sugars together till they are creamy
  • In a separate bowl beat your eggs and vanilla just till it is mixed now add it to the butter mixture
  • I'm a real stickler on making sure things are mixed there is nothing worse then taking a bite of these delicious cookies and getting a big bite of something that did not mix up ...get it????
  • Ok add the vanilla and eggs to the sugar mixture. Mix it up
  • In yet another bowl sift the flour , baking soda and cinnamon/nutmeg together
  • Now add that to the mixture your almost there.....exciting huh!
  • Alright now add the oats....the raisins....nuts....chips......
  • Here is my secret you know the 1/2 cup of shortening. It should be soft you are going to have to get your hands dirty...Mix the Crisco shortening into the mix make sure it is through out....this makes the edges cook crispy like yet the inside seems to be just gooey enough...Look it works for me and my thousands of followers....lol
  • I use gloves all the time in the kitchen because it sure makes life easier just pop off the gloves and on to the next step..think about it(Surgical Gloves)
  • Ok all mixed up lets get these guys on a cookie sheet. I put 12 to a sheet for 12 they do not spread to much and keep there shape nicely. Use what you will to scoop i use an old fashion plain ole everyday spoon soup spoon. I know Ice Cream Scoop but I'm to cheap to buy one just for cookies and my scoop is a flat one.......
Please keep an eye on these little ones. Check them after 10 minutes use a toothpick to get just the texture you want.......I'm really sure the ole 12 x 12....... 12 on a sheet for 12 minutes

Take the cookies out let them cool for about 5 minutes before you transfer them to the cookie rack..... Now go get a big glass of Milk or a hot cup of coffee...tea oh heck just grab a hot one and eat it....Enjoy ...xoxo

Bananna Rama Oatmeal Cookies



Ingredients


1 cup white sugar
1 cup margarine
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cloves
1 teaspoon ground cinnamon
3 ripe bananas, mashed
2 cups rolled oats
1 cup semisweet chocolate chips














Directions
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, cream butter and sugar together until smooth. Stir in the eggs and vanilla. Sift together the flour, baking soda, cloves and cinnamon, stir into the creamed mixture. Then add the mashed bananas, rolled oats and chocolate chips, mix until well blended.
Drop dough by rounded spoonfuls onto unprepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven. Remove cookies from pan to cool on wire racks.

Pumpkin Pie

Pumpkin Pie from scratch

A pumpkin should cook up to 3 cups or so less or more is ok
A cup of sugar
1 tsp ground cinnamon
1 tsp of ground cloves
1 tsp of ground all spice
½ tsp pf ground ginger
1 tsp vanilla extract
½ tsp salt
4 eggs
3 cups of fresh pumpkin

Now a pumpkin is a pumpkin is a pumpkin no it is not there are two types the pie pumpkins and the jack o lantern I grow my own so a jack oh lantern it is. There are also many ways to cook your pumpkin my way just wash it put the whole thing on a tray and cook the little guy in the oven at 425 for 45 miniutes to an hour and a half till he is fork tender. Then you can cut him in half scrap out the seeds for the kids and hubby Get rid of the hairy stuff and cook it more covered in the micro or oven to get it fork tender through and through.

Ok once it is cooked scrap the inners out and put it in your food processor if you don’t have one use your blender or anything that will make a mash that is satisfying to you.
Add all your spices and the liquid (eggs) ya know you can add a pinch of cream to thicken it up if you want to . I do but I’m partial to cream in all things pie like.

Did you buy a pie crust or make it from scratch. I made my first one from scratch with this recipe and it was so flaky it crumbed right in my mouth,…but it was good we still try to perfect that recipe but for now look up pie crust recipes on the internet or maybe buy one yeah that sounds really good,.

Ok pour your pumpkin mush in the pie pan and cook in the oven for oh 45 minutes till a fork comes out clean and it looks done not hard to judge this one……… look at my pictures mine was looking pretty good and tasted even better ………….. Enjoy this is so much easier than I thought it would be

Clean your seeds and bake them in the oven at 325 for about 15 minutes salt them up and enjoy them.....my kids loved this when they were little now I mail them to the Island of Oakland for Chris to enjoy...he is my seed eater... God Bless

Chicken Mexi-Italian

This is a good one just made it up so here are you ingredients

5 chicken breast larger ones that means big not wimpy ones
Mushrooms’ use the ones you like I use plain old round ones
A small can of green chilies not hot ones unless you feel frisky
Some onion I like red just a little chopped
Crushed tomatoes in a can…. large one
Parmesan cheese the shredded flakes and the ground ones
Some fresh oregano if available or bottled
And seasons of your choice

Ok follow the pictures they help

Oven at 375

Ok clean and wash your chicken
Then I like to cut off the fat and reserve it with one of the breasts for soup later in the winter chop it label it and freeze it.
Ok in your pan line it with aluminum so it is easier to clean. Ok spread some of the crushed tomatoes from the can at the bottom of your pan
Then line up your trimmed chicken breast. I do a head to toe kind see the picture
once they are lined up you can spread your stuff on .
Add the chopped green chilies… the onion… the peppers…..mushrooms and sprinkle some of the parmesan cheese the ground kind.
Once this is done you can spread the rest of the crushed tomatoes and top with the seasons of your choice add the shaved Parmesan cheese…. now you can season under the tomatoes to just don’t over season. I put some sprigs of oregano from my garden in the corners and remove it before I serve the dish.

Ok lets throw it in the oven and bake for oh about 45 minutes you know when it is done if not remove the dish from the oven watch you hands it is hot. Now cut through one breast and see if it is soft and not pink inside.

The Walnuts




OK so this salad is the best thing but lets take is one thing at a time first the glazed walnuts ..now yes you can buy your own but come on Linda help me here we know good candied walnuts are cause you give them away they are so good you dare not eat them you won't stop .....here is the recipe

2 cups of walnuts keep them in the frig for a few days cause for some reason cold is best...now take the 2 cups and roast them in an oven at 350 for about 5 minutes on a cookie sheet.... till they get brownish do not over cook because they will taste burnt even if over done a little....now take the walnuts out and cool them..wait about 20 minutes then mix this

1 cup of sugar
1/3 of a cup of water
2 tbsp of corn syrup
1 tsp salt
two teaspoons of cinnamon
1 tsp of vanilla

Cook the sugar, water and syrup and salt till it is bubbly not burnt this is a watch me thing to cook you must watch me ...... now once it is bubbly or if you want to use a thermometer it should be 233 ish OK turn down the heat add the rest of the stuff the . Now add the vanilla and the cinnamon it will fizzle OK oh crap put the cooled nuts In a brownie pan flat i think if you do it in a bowl they do not get covered good enough and they all need a little coat...OK pour the syrup over and mix them...oh i forgot i like real vanilla bean so i will get one cut it get out the guts and bake the pod in the syrup and take the pod out before i add it to the nuts...nutty huh

pour the nuts on some was paper or parchment but was is best let them cook and break them up...

This week is good cooking week....

This first picture is roasted cashews DANGEROUS



Tonight I made home made granola...last week I adjusted to the diet and this week I'm embracing the veggies and cookin up some healthy stuff...Here is Monday Homemade granola


3 to 4 cups of rolled oats they are the best old kind
2 cups more or less it is another Lani to taste recipes I have combined a few good ones shredded coconut
2 cups sliced almonds i also add sunflower seed there so cute
3/4 ish cup vegetable oil you know that you can not use Olive oil in this I know you think it is better than the veggie use canola if you need to but if you use Olive oil you will have dinner time granola ...
1/2 cup good honey don't use cheap honey get good stuff your worth it....and make it what ever flavor you like
1 cups small diced dried apricots or diced figs, or sour dried cherries or dried cranberries I use raisin and pitted sour cherries....look add the dried fruit you like just do it
  • 1 cup roasted, unsalted cashews this makes the granola fattening so add at your risk Warning cashews are fattening.....but roasted because you will stop sleeping with your lover to get another bite.....we are all adults so please use your head when you add stuff this is a pretty simple thing to make ....oh crap hang on I have to go turn mine....

Directionish

Preheat the oven to 350 degrees F.

Toss the oats, coconut, and almonds together in a large bowl

Whisk together the oil and honey in a small bowl with a whisk go figure...then combine it with the oats ..coconut and almonds or nut of choice i mix this with a wooden spoon my wooden spoon is my hands cause I like to feel my food and lick my fingers after I'm done ...if you use your hands and lick your fingers you can not eat any more granola you have had your days worth....make sure the stuff is coated evenly

Pour onto a 13 by 18 by 1-inch sheet pan line the baking sheet with parchment paper it makes it easier to slide into the mixing bowl to mix with the dried fruit and fattening cashews

Bake, stirring occasionally with a spatula use the tool your hands will get burned if you use them...yes I have tired to use my hands ouch ..... until the mixture turns a nice, even, golden brown, about 45 minuteish. Keep an eye on this stuff it can get brown fast every oven like every woman is different

Remove the granola from the oven and allow to cool, stirring occasionally. Add the dried fruit...oh yeah this stuff kicks butt............................Enjoy


Store in an airtight container for up to well never mind it will not last that long....

Let's talk suffering....

This Pasta Class was over the top great and the special guest was incredible......



the class tonight was on homemade pasta....and to put more pain there was a grand mommy straight out of Italy and did not speak a word of English let me grab the pictures...IT was so hard not to devourer the food...but I did good had some salad and passed on the bread...picked at the pasta got the veggies....I'm so proud but it was so much fun to learn from a rel EYE..talian ....I love my cooking class I go once a month but I signed up for three in May not good cause it is killin me not to eat the stuff ...but this self inflicted challenge me and my big ideas...hey I will weigh in every two week I think going on the scale to often is not good..I will either get to excited or to disappointed....and we need to make a follow up video with my trainer Rob....LOL....Easter is coming this weekend another test of the will power but I think that this new Kick Butt challenge is good I'm really trying to look at food differently....With good decisions instead of Taste good Lani must eat it! And to be honest the biggest challenge for me is the late night candy fix.....two nights no sugar really a big thing for me really big like my butt.....Ok enough God Bless tomorrow day 3
