This week is good cooking week....

Tonight I made home made granola...last week I adjusted to the diet and this week I'm embracing the veggies and cookin up some healthy stuff...Here is Monday Homemade granola


3 to 4 cups of rolled oats they are the best old kind
2 cups more or less it is another Lani to taste recipes I have combined a few good ones shredded coconut
2 cups sliced almonds i also add sunflower seed there so cute
3/4 ish cup vegetable oil you know that you can not use Olive oil in this I know you think it is better than the veggie use canola if you need to but if you use Olive oil you will have dinner time granola ...
1/2 cup good honey don't use cheap honey get good stuff your worth it....and make it what ever flavor you like
1 cups small diced dried apricots or diced figs, or sour dried cherries or dried cranberries I use raisin and pitted sour cherries....look add the dried fruit you like just do it
  • 1 cup roasted, unsalted cashews this makes the granola fattening so add at your risk Warning cashews are fattening.....but roasted because you will stop sleeping with your lover to get another bite.....we are all adults so please use your head when you add stuff this is a pretty simple thing to make ....oh crap hang on I have to go turn mine....

Preheat the oven to 350 degrees F.

Toss the oats, coconut, and almonds together in a large bowl

Whisk together the oil and honey in a small bowl with a whisk go figure...then combine it with the oats ..coconut and almonds or nut of choice i mix this with a wooden spoon my wooden spoon is my hands cause I like to feel my food and lick my fingers after I'm done ...if you use your hands and lick your fingers you can not eat any more granola you have had your days worth....make sure the stuff is coated evenly

Pour onto a 13 by 18 by 1-inch sheet pan line the baking sheet with parchment paper it makes it easier to slide into the mixing bowl to mix with the dried fruit and fattening cashews

Bake, stirring occasionally with a spatula use the tool your hands will get burned if you use them...yes I have tired to use my hands ouch ..... until the mixture turns a nice, even, golden brown, about 45 minuteish. Keep an eye on this stuff it can get brown fast every oven like every woman is different

Remove the granola from the oven and allow to cool, stirring occasionally. Add the dried fruit...oh yeah this stuff kicks butt............................Enjoy


Store in an airtight container for up to well never mind it will not last that long....

I love granola, but it's too yummy to eat only a 1/4 cup full at a time. I heard it's "deadly" for a diet - but, if you have willpower of steel, you could pull it off. Good luck!
