Crustless Quiche

Ok so her we go again but this time no crust yup were going light yet again and I must say without the cooking classes we would be lost so lets say a big thank you to my friends at Seasons Catering......They have made me the cook I am today which says well it just says....lol....

Now this one is easy why you ask because it is like a cruise all inclusive....all in one pan...let go kids and tom

The Ing
redients
1 cup diced potatoes
3 cups sliced onion ( about a pound if you must weigh it)
3 cups of sliced zucchini and isn't zucchini the nicest little veggie
1/2 a cup of sun dried tomatoes and this is the taste of heaven in this whole recipe ok ok back to the stuff
1/3 cup of water
the seasons are simple
1 tbs fresh thyme
1/2 tsp salt
1/4 tsp freshly ground pepper ...if u do not have a pepper grinder than get one it is 2010
1/4 cup of (1 ounce) grated Parmigiano-reggiano cheese ...divided

2 tbs fat free milk
6 large egg white , lightly beaten
4 large eggs . again lightly beaten

did u know the harder the cheeses the more fat it has...so there

Start cooking ready
heat a 10-inch non-stick skillet over medium high heat. Coat pan with cooking spray.
Add onion and zucchini cover and cook 10 minutes or so until they are lightly brown you know to stir it
While they are cooking Mr.onion and its friend Mr.zucchini add 1/3 of a cup of water. but just do it a tbls at a time it is just to make the onion not stick to the non stick pan...lol...ok now add in the potatoes,thyme,tomatoes(the tomatoes are the best taste of the whole meal to me.,,,, the salt and pepper add it now
Spoon into a medium bowl and let it cool a little
Ok next step combine 3 tablespoons cheese,milk,egg whites and eggs in a small bowl stir with a wisk or fork . Add egg mixture to potato stuff and stir well.
Pre heat boiler
Wipe the pan with a paper towel, re coat the pan with the cooking spray. Pour potato mixture into the pan. Cook over medium heat 7 minutes or until the bottom of the quiche is browned and the top is almost set
Wrap the handle of the pan with foil. sprinkle the remaining 1 tablespoon of cheese over the egg mixture . Broil for 5 minutes or so until the cheese is ummmgood melted and the top is set....Cut this stuff and enjoy

Lani, you are too funny and that recipe sound soooooo good...and thanks for the tip about the cheese...it didn't know that but I will definitely remember it!
