Ok so here is a great recipe Eggplant Burgers and with a Fab Garlic Herb Aioli Sauce...recipe below pictures for inspiration....
Ok here is the recipe make the sauce first then you can put it in the refrigerator to get cold...yummy or not... see this little wonder see it it is yes yes yes it is the magic bullet only my newest greatest tool and if you had one you would not have to do the chopping and stuff.....ok back to reality
Aioli
1/4 cup light mayonnaise
1 tbsp extra virgin olive oil
1 tbsp of fresh lemon
* hey the greatest idea in the world is to squeeze the lemons and put the juice in ice cube trays freeze them then when you need it pop one out
one garlic clove
* did you know you can freeze garlic and use it when ever
1/2 tsp chopped fresh thyme
1/2 tsp chopped fresh parsley
1/2 tsp chopped fresh rosemary
Hey forget the chopping get this little tool
Ok the burger part:
1 (1 pound) eggplant cut crosswise into 1/4 inch-thick slices
1 tbsp kosher salt (Optional)
1 tsp chopped fresh thyme
1 tsp chopped fresh parsley
1 tsp chopped fresh rosemary
* ok fresh is great and I found out this year that you can grow them in pots right in the kitchen or a pot on the patio or anywhere how neet is that....
Cooking spray
4 (1/2 inch thick) slices of red onion
4 rolls burger rolls
* hey Orowheat has these great new little wheat rolls that are low fat ad so cute let me go find link so you can see them.
4 (1/4 inch siced tomatoes
2 cups of arugula leaves don't be scared it is peppery taste but delicious on these sandwiches
Ok rules of engagement:
To prepare aioli combine all the ingredients in a small bowl or food processor or the magic bullet....oh yeah....stirring well. cover and chill
To prepare sandwiches, arrange the eggplant -in a single layer on several layers of heavy duty paper towels see the picture yup let them stand 30 minutes pressing down occasionally. Rinse eggplant with cold water. Drain and pat dry.
Prepare grill...now you can do it outdoors but I think the indoor grills are the best invention another great tool hubby got me...god I love that man.
Lightly coat eggplant with cooking spray, sprinkle with herb mixture.
Arrange eggplant and onion on the grill rack coated with cooking spray. grill 2 minutes on each side or until vegetables are tender and lightly browned. Remove from heat and keep warm. Arrange those delicious little rolls in a single layer and grill on the rack coated with cooking spray., and grill for 1 minute on each side or until toasted.
Spread about 2 teaspoons aioli over 1 side of four slices. divide eggplant and onion evenly among the bread. Place tomatoes some arugula. spread the rest of the aioli spread and yummy yumm...enjoy guys
